Khmer cuisine for the 21st century

By Peter Olszewski

Cambodian chefs are beginning to make their mark in the local hospitality industry, and in Siem Reap they are emerging as masters of both Khmer and Western cuisine.

A typical example in Ving San, executive chef at Angkor Palace Resort & Spa. A veteran of upscale hotel kitchens, Ving San has worked in two of Phnom Penh’s premier hostelries: the former Hotel Sofitel Cambodiana, from 1992 until 1997, and then at Raffles Hotel Le Royal until 2003.

He moved to Siem Reap for a brief stint at Sofitel Royal Angkor, and joined Angkor Palace Resort & Spa in November 2003, where, as well as currently being a dab hand at international cuisine, he also lovingly creates Cambodian food in all its former glory.

“Many people don’t really know what Khmer food is,” Ving San lamented. “So I create dishes today in the hope that my own country’s food will become world renowned”.

He has taken his first steps toward achieving this with his culinary tour de force dubbed Royal Khmer Cuisine. A special introductory taste of gourmet Cambodian food, it is a request only feast, available at the Angkor Palace Resort’s Soriya Restaurant for USD 42 per person.

This superb sampler menu kicks off with a mise en bouche of fish amok, before moving on to a combination salad comprising mango, scallops and crispy purses, and rounding off part one of the experience with a Cambodian pumpkin soup.

Next comes a pair of main fare tasters, starting with a visually dramatic, grilled Tonle Sap prawn dish served with sticky ice, kale, and black bean sauce. This is followed by a grilled beef on lemongrass skewer served with delectable Cambodian pickles. Dessert is dubbed ”Pumpkin Custard” but is actually sweet banana and coconut milk in sago.

Many degustation-style menus are big on taste and miserly in quantity, but the Royal Khmer Cuisine fare borders on an endurance test as servings are generous and, with six courses on offer, the food keeps on a-coming.

This special menu was also devised following Hun Sen’s relatively recent decree the Khmer food must replace French cuisine at state and government functions, which prompted chefs to further explore the gourmet qualities of Khmer cuisine.

One of the standouts on Ving San’s Royal Khmer Cuisine menu is the fist amok. Many gustatory crimes are committed on a daily basis in Siem Reap in the name of amok, which is often rendered as a cheap bog-backpacker variant of a vegetable stew laced with sad smidgeons of seemingly boiled fish or chicken.

But Ving San’s fish amok is an art form in itself; a delicious, creamy taste-bomb that literally melts in the mouth. Ving San wryly comments, “Everywhere in Siem Reap they have amok, but our amok is not the same as they do it in Pub Street.

“Here we use many special ingredients, such as Khmer herbs. We make the amok as a delicacy, and that is what makes it different form outside. On the street here they make it with many vegetables, but we do only the fist.”

Ving San’s fish amok has the consistency of a piscatorial crème caramel, and he beams when the texture is complimented.

“Yes, we do it every creamy,” he acknowledges. “We simply add coconut cream.”

Check-In by TravelDailyAsia.Com

By Daniel Steffe, on Tuesday 28 July 2009

Most tourist attractions are just that, tourist attractions. Their beauty, grandeur, elegance, history and experience are often marred by too many people and that typical holiday vibe that emits from them. Thankfully, the vibe at the mesmerizing temples of Angkor in Siem Reap is very different. In the peak season, they are busy with people, but a lack of clunky additions, modern food vendors or westernized ‘experience’ packages, makes them feel more natural, more real. This experience is perfectly reflected by the Angkor Palace Resort & Spa, a well-equipped venue 20 minutes from the temples of Angkor, in the heart of town.

It’s only ten minutes from Siem Reap International Airport and upon arrival you are not thrust out of Cambodia and into this faraway fairy land, as is typical with most resorts, but instead guided into an elegant extension of the region. A welcome drink and traditional scarf are offered as you begin to notice the understated features of
resort. Interestingly, the owner of the establishment, a local, is the architect and mastermind behind the resort’s perfectly Cambodian persona. Your first taste of which is in the main lobby which is bold, but simple and intriguing, yet calm.

The rooms also relate to the intimate local culture. They feel very homely, yet manage to fi t in all the creature comforts of home, including complimentary internet. And the rooms overlooking the pool provide the added benefit of one of Asia’s most sensual sunsets. Rooms range from Deluxe to a One Bedroom Suite, each adorned with furniture created by the owner/ architect, the pride of which is the lounge chairs that are carved out of local wood and reflect a traditional elephant harness. It’s a subtle, yet clever touch. There are also eight private Villas if you really want to splash out.

Facilities on offer here are typical of a resort of this nature, but are executed with a touch of local charm. The pool is adorned with a swim-up bar, there is a tennis court, driving range and a simple fitness centre. However, the majority of the local charm is reserved for the spa, which offers a traditional Khmer massage. Thanks to the countries troubled past, the massage is not as popular as its Thai cousin, but is something that should be experienced. It has certain similarities but demonstrates a slightly gentler touch. After a hard day temple hunting it’s a great way to be treated like the kings who built them.

Cambodian delights and a selection of western fare make up the menu of the resort’s main restaurant. A must try is the Royal Khmer Cuisine menu, available upon request. It’s a seven course event that showcases
the best local dishes. It’s derived from a traditional royal menu and is an experience unto its own. It’s fitting in the surroundings and a perfect way to feel like the royalty who govern this charming part of Asia.

Although it has the stamp of a Summit Group resort, the Angkor Palace Resort & Spa is a local family business, with a genuinely local experience. It’s the only five star resorts that is designed and owned by a Cambodian. So, if you’re coming to Cambodia for an escape that will allow you to experience true Cambodian culture, then this resort is nearly as grand as the temples that surround it.

Help An Angel Through The Tevy Foundation

In Cambodian, "Tevy" means Angel. Angels here refer to the children in Cambodia. The Tevy Foundation is a non-profit organization whose mission is to provide a promising future for disadvantaged women.

It does this by providing long-term and sustainable employment opportunities through weaving of the traditional krama (Cambodian scarf) in Kompong Cham Province. These women can weave these krama at home and look after their children at the same time. These krama are sold as the Magic Cool Khmer Tie for the cooling effect that you can feel when wearing the krama around your neck.

As a socially responsible member of the community, Angkor Palace Resort & Spa supports the Tevy Foundation by incorporating the Magic Cool Khmer Tie as a welcome gift for selected accounts. We are pleased to inform that we manage to sell about 1,000 Magic Cool Khmer Ties every month.

Hotel guests can also support the Tevy Foundation through the purchase of a Magic Cool Khmer Tie at USD5.00 from our mini-bar in the guestroom. Your contribution can help support many families in Cambodia.

ConCERT... Connecting Communities, Environment & Responsible Tourism

Established in November 2008 on World ResponsibleTourism Day at Angkor Palace Resort & Spa by Michael Horton, ConCert is a Cambodian NGO with noble aims.

Despite the rich cultural and natural heritage in Cambodia, it is still one of the world’s poorest nations. In Siem Reap province, over half of the people live below the poverty line and a large number of organisations and NGOs are engaged in community development and support activities, which supplement the work of the government. Covering many sectors, these include the care of children, (orphanages, day centres & schools), education, agricultural development, infrastructure, women's issues, health, the care and rehabilitation of land mine victims, and environmental & biodiversity protection, etc.

The primary aim of ConCert is to reduce poverty by increasing the amount of support given to the organisations in and around Siem Reap. It plays an important facilitating role between organisations and NGOs engaged in community development and support work, and the various communities that need help.

ConCERT offers information on a range of activities that depend on public support, all of whom are well managed, financially transparent, and sustainable, working in partnership with local people. The types of assistance required varies from funding, purchase of materials, raising awareness and volunteers

As a socially responsible member of the community, Angkor Palace Resort & Spa is proud to be associated with ConCERT through the provision of a dedicated display area in the lobby. The area is used for the display of educational and informational materials to raise awareness of the role of the member organisations and their functions in supporting the various communities. 15 things to do during your stay in Siem Reap

1. Take a Trip to Banteay Srei Temple: Located about 41km from Angkor Palace Resort & Spa, this Hindu temple was built in the late 10th century. C.E. Banteay Srei, which means "Citadel of the women", displays some of the finest examples of classic Khmer art. The walls are densely covered with some of the most beautiful, deep and intricate carvings of any Angkorian temple. The temple's relatively small size, pink sandstone construction and ornate design give it a fairyland ambiance (quoted by Siem Reap Angkor Visitor Guide Book, 27th Edition, April-July 2008, page: 26). Top Tip: Put on your comfortable shoes, and dress respectfully as this is a Buddhist country. Be polite, have fun and enjoy yourself. Drivers usually charge a fee in addition to their normal daily charge for the trip.

2. Sunrise at Angkor Wat: Sunrise over Angkor Wat is a virtual pre-requisite of any visit to Siem Reap and the Angkor temple complex nearby. A view of Angkor Wat at sunrise is what many, many people dream about. In Japan it is a symbol for beauty of nature combined with ancient craftsmanship. It makes people travel around the world, get up at 4 in the morning and wait three hours standing on the spot to get a glimpse of it. Contributed by Oliver (Oct. 2007) - Tokyoahead.com. Top Tip: Contact our Concierge or Tour Desk to arrange car and/or Remork (tuk-tuk) for you in advance. In Siem Reap, there is taxi service for early morning calls.

3. Sunset at Phnom (Hill) Bakheng: Bakheng is the name of the temple located on the top of the mountain about 65m high. This is the first major temple to be constructed in the Angkor area, which marked the move of the capital of the Khmer empire from Rolous to Angkor in the late 9th century AD. Travellers who come to Siem Reap make it a point to catch the sunset set & panoramic views of Angkor Wat and Siem Reap town. Top Tip: Be ready at the temple prior to 1715hrs in order to enjoy the best location since there are many tourists (from hundreds to thousands). You can either take an elephant ride or walk-up to the hill which takes about 15 to 20minutes from the ground.

4. Visit Local Pagoda: There are several pagodas in and around Siem Reap, which form the traditional seat of Khmer culture and play a central part in everyday life. A visit to one is an interesting experience and you can even get your possessions blessed by the monks; if you need a little luck from Buddha (quoted from Cambodia pocket guide, Dec-Feb, 2008-2009. #9). Top Tip: We recommend to visit Wat (pagoda) Preah Prom Roath which is located in the heart of the city (about 3.5km from Angkor Palace Resort), and Wat At' Vear which is located outside the city - about 10km from Angkor Palace Resort. Wat At'Vear has ancient temple located inside.

5. Stay at Angkor Palace Resort & Spa: While you are in Siem Reap, don't miss the opportunity to experience at least a night in an authentic Khmer designed resort. This is the first Cambodian-owned premier luxury international 5-star resort accommodation. Its design, décor and furnishing reflect the finest in Cambodian architecture befitting royalties and dignitaries. Top Tip: Numerous online promotions are available throughout the seasons. For online reservation, please visit: http://www.angkorpalaceresort.com/ or contact our reservation hotline 855 12 333 240.

6. Visit Angkor National Museum: This museum is a profound cultural landmark in Siem Reap placing in the area of 20,000 sqm which reveals the Golden Era of the Khmer Kingdom, and includes The Cultural Mall. Top Tip: Angkor Palace Resort & Spa is located about 3km from Angkor National Museum and takes about 10 minutes drive by car and about 15minutes drive by Remork (Formerly Tuk-Tuk). The entrance ticket is USD 12.00nett per ticket per person (subject to change).

7. Visit Angkor Wat Temple: Angkor Wat temple (pictured) was built by King Suryavarman II (who reigned from 1113 to 1150) to honour Vishnu, identified as a god-king and perhaps as his funeral temple). Angkor Wat is visually, architecturally and artistically breathtaking. It is a massive three-tiered pyramid crowned by five lotus-like towers rising 65 meters from ground level; with its soaring towers and extraordinary bas-reliefs, is considered by many to be one of the most inspired and spectacular monuments ever conceived by the human mind. Top Tip: Angkor Palace Resort & Spa is located about 10km from Angkor Temple and takes about 20 minutes drive by car and about 25minutes drive by Remork (Formerly Tuk-Tuk). A private sightseeing tour can be arranged to visit the temples and city tour. Car rental with driver is available at day and night time. Please contact our Concierge/Tour Desk team prior your arrival.

8. Take a Boat Trip on the Tonle Sap Lake: It is the largest freshwater lake in South East Asia and is an ecological hotspot that was designated as a UNESCO biosphere in 1997. In the wet season, the Tone Sap Lake is one of the largest freshwater lakes in Asia, swelling to an expansive 12,000km2. Many villagers live on the water including houseboat, school, pagoda…etc which forms a floating village; this is the most interesting place for visitor to see and experience themselves. Top Tip: Angkor Palace Resort & Spa is located about 20km from Tonle Sap River and takes about 30 minutes drive by car and about 40minutes drive by Remork (Formerly Tuk-Tuk). Private boat trip can be arranged by our Concierge and Tour Desk Team.

Top Tip: Special green fee rate and/of golf package can be arranged at Angkor Palace Resort & Spa. Please contact our reservation team or book your package online (subject to change).

10. Visit Bayon Temple: Bayon temple was built by the greatest builder king Jayavarman VII in the late 12th century or early 13th century as the official state temple of the Mahayana Buddhist (Mahayana Buddhism’s compassionate Bodhisattva, or perhaps a combination of Buddha and King Jayavarman VII). The giant stone faces of Bayon have become one of the most recognizable images connected to classic Khmer art and architecture. Top Tip: Angkor Palace Resort & Spa is located about 13km from Southern gate of Angkor Thom and takes about 25 minutes drive by car and about 30minutes drive by Remork (Formerly Tuk-Tuk). A private sightseeing tour can be arranged to visit the temples and city tour. Car rental with driver is available at day and night time. Please contact our Concierge/Tour Desk team prior your arrival.

11. Visit Angkor Silk Farm: Angkor Silk Farm is located about 15km west of Siem Reap town. It is run by Artisans D’Angkor, a state-run organization that promotes fair trade and sustainable development for the Cambodian people. By training workers for skilled professions, these people are able to provide for their families and promote their own culture through art. Top Tip: Angkor Palace Resort & Spa is located about 13km from Angkor Silk Farm and takes about 30 minutes drive by car and about 45minutes drive by Remork (Formerly Tuk-Tuk).

12. Traditional Dance: Dance is an integral part of Khmer culture, combining Apsara dances, folk dances and shadow puppetry. One of the not-to-be-missed dances is "Apsara Dance", a uniquen Khmer traditional dance. Top Tip: Angkor Palace Resort & Spa occasionally arranges this dance for special functions within the resort complex. However, please contact our front office or concierge staff for recommendations on local show venues in town during your stay.

13. Attend Dr. Beatocello's Concert: Swiss doctor Beat Richner plays Bach on his cello every Friday and Saturday evening at 7:15 pm at Jayavarman Hospital, to provide support to the three children's hospital that he runs - donations of blood and money are most welcome. Top Tip: Please contact our concierge team to arrange the transportation for you.

Top Tip: Learn more about how our Executive Chef Ving San prepares his Royal Khmer Cuisine please visit the Blog " The Royal Khmer Cuisine".

15. Visit Local Markets: No trip to Siem Reap would be complete without a visit to one of the traditional markets, though they can be little cramped and hot in the middle of the day. Don’t miss the Angkor Night Market too, which features over 100 outlets. (quoted from Cambodia pocket guide, Dec-Feb, 2008-2009. #9). Top Tip: Angkor Palace Resort & Spa organizes a free-shuttle service to Pub Street (located closed to Angkor Night Market) every evening from 1900hrs up to 2300hrs. Please contact our front office or concierge team to reserve your seat.

Once you have enjoyed these activities, take a rest and pamper yourself with a relaxing massage at our Kainnora Spa. The Royal Khmer Cuisine

Many travelers always wonder – what does Khmer food look and taste like; is it similar to other ASEAN nation food?

Prior to joining Angkor Palace Resort & Spa, our Executive Chef Ving San (pictured) has spent much of his professional career researching, together with his previous colleagues , the Royal recipes of Royal Khmer Cuisine that were lost for two decades during Cambodia war.

The Royal recipes have been carefully prepared by The Royal Palace' Chefs in the 1960s(?) and only served for the Royal family, dignitaries and guests of the King.

Ving San said “Royal Khmer Cuisine is the menu represented at The Royal Palace in the Kingdom of Cambodia and this menu has been used for welcoming guests to The Royal Palace. I am delighted to introduce the selected receipes from our finest traditional Khmer cuisine, to our hotel guests at The Palace. As a Cambodian, I fully understand the characteristics of each ingredient, and I am familiar with culinary treasures from each province of Cambodia.”

A popular signature dish presented by Chef San from the Royal Khmer Cuisine is the baked large prawn from Tonle Sap Lake dressed in a mild spicy curry sauce. According to Chef Ving San, “I am pleased that our guests from Asia to Europe enjoy this particular dish very much.”

Chef Ving San and his team are busy finalizing the menu for the new Royal Khmer Restaurant in the resort (scheduled to open in third quarter of 2009). He explains, “The world is globalised nowadays and major Asian cuisines, i.e.; Japanese, Chinese, Korean, are available all over the world, but Khmer cuisine is unique to Cambodia and this is one of the key experiences for visitors to Cambodia to try.”

The Charming Uniform!

Be enthralled by the beauty and majesty of Angkor Wat, the largest and most enchanting of a series of temples bearing testament to the skill of Khmer architecture at its greatest. The temples of Angkor are witness to the legacy of the Khmer empire that embodied a perfect fusion of spiritual devotion and creative ambition. Today, this is still the hallmark of Cambodia – where a spiritual and cultural heartbeat still strongly resonates against the backdrop of modernity.

In respect to the wealth national and rich culture, the team at Angkor Palace Resort & Spa putting the effort together to provide the highest Khmer hospitality service to the residents during their stay in a memorable experience. One among the unique experience, guests will be charmed by a contemporary fashion design of more than twenty different staff uniforms which is reflecting the tradition, dignitaries and royalty.

All the residents will be greeted upon arrival by a doorman wearing a “Sampot K’bin” – a type of sarong and/or pantaloon worn by Cambodian mean during formal occasions and ceremony – incorporating the traditional Cambodian colors for the seven day of the week.
Sampot K’Bin will be visible and worn by most of our staff in the different department such as Room Valet, Bellboy, and telephone operator staff. Apart from Sampot K’Bin – the shirt for the man staff also reflecting the different design which is obtained from the sculpture of the temples.

The Hostesses in the restaurant, which serves Royal Khmer Cuisine, wear a long, elegant skirt and cream color shirt with short sleeves. Apart from the frontline staff, the housekeeping staff will be accompanied by Krama – a kind of short scarf which cover the some part of the body to reflect the attraction.

Krama is the Khmer word of scarf. It is arguably the one single item that is representative of Cambodia as it is used from pleasant to royalty in a variety of ways, on the head, as a towel, as a belt, as a wrap when men take a shower in the open, as a carrier for a packet meal, as a baby seat and as far as your imagination allows.

The design of uniform has been incorporated by the owners of the resort and all local management staff to make it unique and charm to our residents.

Preferred Deal Struck

The deal struck earlier last year to incorporate Siem Reap's Angkor Palace Resort & Spa into the Preferred Hotel Group, part of the Summit Hotels & Resorts brand of more than 150 international hotels, was officially announced by the group in Hong Kong last week.

The hotel is the first Cambodian-owned luxury five-star resort and its design reflects traditional Khmer architecture. It features 251 guestrooms and suites and eight villas, all furnished in Cambodian style with inlaid teak floors and traditional poster beds. Balconies overlook the gardens of the resort, which is managed by the personable Weng Aow.

It also features four restaurants and bars, and the Kainnora Spa, with nine treatment rooms and four spa villas offering a wide range of "holistic body treatments", including traditional Khmer massage. It has a gym, two tennis courts and a large outdoor swimming pool. A new feature is a golf driving range within the hotel grounds, with 16 sheltered driving bays.

"Siem Reap is one of the major tourism hotspots in Asia, and we are thrilled to be partnered with a hotel that is truly representative of genuine Cambodian hospitality. We aim to bring high-end FIT and MICE business to the city and to the resort through our global channels," said Mark Simmons, area managing director for Preferred Hotel Group's Asia-Pacific operations, in a Hong Kong-released statement.

This makes the Angkor Palace Resort & Spa a sort of sister hotel to the soon-to-be-opened Sothea Courtyard luxury boutique hotel, which is a member of the Preferred Boutique "collection", also a division of the Preferred Hotel Group.

Rebuilding Cambodia

Letter from Siem Reap by Weng Aow (pictured), General Manager, Angkor Palace Resort & Spa

CAMBODIA first became a part of my life in 1997 when I volunteered for a project there for Raffles International.I went to bring over the pioneer batch of Cambodian hospitality trainees from Phnom Penh to our hotels in Singapore for systematic on-the-job training.

These trainees would eventually form the backbone of the hospitality industry in Cambodia. Back in 1997 when Raffles was preparing for the opening of its two properties in Cambodia, there were hardly any skilled hospitality workers to speak of, given the tragic past of the kingdom.

In 1997, not many foreigners were keen to work in Cambodia. The country was going through political turmoil and there was no stability. Having personally experienced the rough political situation and lawlessness, including the evacuation of foreigners, I felt a calling to be here and a strong desire to be part of the country's rebuilding efforts.Having been trained as an officer in the SAF, I was grateful that my training came in handy during this crisis.

We in Singapore have been very fortunate to be living in a peaceful environment and this crisis was an eye-opener for me. I do not see myself as just a hotelier but prefer to look at this as a vocation to help the locals improve their lives through imparting skills and knowledge.

Today, I am managing a Cambodian-owned 259-room Angkor Palace Resort & Spa with a staff strength of nearly 300. Called 'The Palace in Siem Reap', it is an authentic Cambodian designed and built resort. The Palace sits on a land area of 11 hectares and comes with its own golf driving range.

The people here have gone through so much political volatility and social unrest. I feel it's my calling to help them regain their lost heritage and pride, and rebuild their homes. The Cambodians are eager to move on and are motivated to improve their lives. Their innate charm and warmth make them natural candidates for the hospitality industry.

In October 2008, the resort embarked on a Responsible Tourism programme which aims to better the lives of the community. These include classroom construction for impoverished villages and training for teachers, purchase of school materials, and toilet and well building projects in the rural areas. We are fortunate to have the support of our owner-cum-architect in carrying out these projects.

As far as I am aware, the number of Singaporeans in Siem Reap is probably less than 20. But in Phnom Penh, there is a Singapore Club called The Buaya Club (I kid you not) with a membership of over a few hundred formed for the purpose of golf. I am now an ardent golf enthusiast and on weekends you will find me at the Angkor Golf Club or practising at the driving range in the Resort. I am happy to play the game with any visiting Singaporean needing a partner in Siem Reap.

As a Singaporean, I have also volunteered Angkor Palace Resort as a rendezvous point for Singaporeans living in Siem Reap in the event of an emergency.

I am not sure where I will be in the long term, but I do think this is a country with lots of opportunities to offer for work or business; and most importantly, a chance to be part of history-making in the positive sense.
